I usually like to make a big batch of overnight oats to last me my five-day work week. One batch will usually feed one person for the week.
This is a very simple combination that I like because I can keep everything on hand at all times without having to worry about things going bad. Oat and Almond milk have pretty long shelf life and if you use frozen Blueberries, you can always keep them on hand.
2 1/2 cups Rolled Oats
2 cups of non-dairy Milk (I like Almond or Oat Milk)
1.5 tbsp of Chia Seeds
1.5 Tbsp Brown Sugar or Honey
½ tsp of Vanilla
1 tsp of Cinnamon
1 cup Blueberries (fresh or frozen)
Mix all ingredients in a large bowl. Cover and refrigerate overnight or at least 1 hour in a bowl or separate into smaller containers for an easy on-the-go breakfast.
You can add lots of different ingredients to make different flavors and combinations. This is just a simple one to get started. It’s easy find other combinations. You can add different kinds of fruit, nuts, chocolate etc… Some people even make it with yogurt to add protein and pro-biotics.
