Ingredients:
10 eggs
1 Red Bell Pepper or Green Bell Peper (I prefer red) chopped into small pieces
1/4 yellow onion chopped into small pieces
1 handful of fresh spinach about 1 cup
1 cup cheese
Pepper
Instructions:
- Prep a muffin tin, by spraying with oil. And Pre-heat oven to 350%
- Mix up 10 eggs in a large bowl with a fork or a whisk.
- Mix in bell pepper, onion and spinach. Mix until well combined.
- Add pepper to the mixture and mix well.
- Pour mixture into each tin. Fill ¾ of the way. Once each tin is filled, sprinkle cheese on the top of each.
- Bake at 350% for 20-25 minutes until egg is cooked thoroughly.
Enjoy!
If you have low-sodium bacon or sausage, you can cook beforehand and add to each cup. Though you will have an increase in sodium depending on branch and how much you add to each cup.
